Homemade Vegan Peppermint Bark Thins

So already, Valentine’s Day is almost here and it often seems like the amount of treats you need to put together for your family, favors for your kid’s class and teacher — is endless.

I have an easy recipe that you can make that is appropriate for everyone on the list. It also happens to be vegan, which is an added bonus.

I’ve always loved how the brightness of peppermint pairs with the depth and richness of chocolate. I think that’s why Andes Mints and Yorkshire Patties were always my favorite after dinner treat.

But imagine for a second the balance of peppermint and chocolate, and then add a crunch. I mean seriously, you just can’t get any better.

My family discovered this when we began Target impulse buying these peppermint bark thins. These chocolates are so incredible, but with kiddos running around, this bag goes incredibly fast. Like 20 minutes fast.

So I had to figure out how to make these to save some cash and I honestly thought it would be fun to make.

Luckily I was right, and here’s how I made these.

Vegan Peppermint Bark Thins

These are a relatively healthy, quick to make treat you can give as Valentine’s Day gift or throw in your kid’s lunch occasionally.  Peppermint and chocolate have been a year round combo in our home and these are definitely something special because of the added crunch.

Ingredients

  • 10 oz Chocolate I like the dark from Enjoy Life
  • 20 Peppermint Candies
  • 5-15 drops Peppermint Extract Not Peppermint Essential Oil

Instructions

  • Start warming up your double boiler.
  • Crush up the peppermint candies in your food processor. You can really play around with the size that your family likes.
  • Warm up your chocolate in the double boiler until smooth.
  • Add a few drops of peppermint extract to your chocolate, mix and taste. SIDE NOTE: I will always encourage in my recipes certain times where the amount needs to really be up to you. Peppermint is STRONG. So just slowly add it until you’re happy. It’s important to only start with a little first.
  • Mix in your candies until fully incorporated.
  • Place the chocolate and peppermint mixture on your parchment paper on top of the baking sheet and smooth until desired thickness is achieved.
  • Place in the freezer for 2 hours to fully harden.
  • Break up into chunks.

Notes

In addition to the ingredients, you also need:
 
Either a food processor or mortar and pestle
Double boiler
Parchment paper
Baking sheet

This is my first video! Please give feedback if there were things I could have done better. SIDE NOTE: I don’t mention the peppermint extract in here but I highly recommend adding it!

I think I am going to triple or quadruple this recipe and give everyone these for Valentines Day this year. It’s all about the presentation too — as always. Grabbing some mason jars, ribbon or twine at Michael’s helps make these chocolates just feel luxurious.

What’s even better? Your entire house will smell like chocolate before you’re done.
